Try getting Dutchie a couple of food cubes or more, or a Kong and make it a little harder to get the food out (not too hard at first though or Dutchie may just give up!).
I have a heavy/long coated dog and we let him have breaks - only when it is bath day does he have to be groomed right through from bath to dry, without a complete break, because he cant go running around when he is wet through. He does still get little breaks to chill out whilst on the grooming table though.
If you are just grooming betsy dry... then break up the time by letting her have a little run around every so often, and maye a potty trip outside on a leash (so she cant run off and get herself all tangled up again!).
