Need an education on this behavior

Hi Everyone, I am simply hoping someone can educate me on something Zeke does. I wouldn't say it's a problem. I'm just curious of the science behind it. We have managed to curb the lunging and nipping behavior, in part thanks to all the advice from this forum. (the freeze like a tree worked wonders)...
