If you are having trouble physically holding him you may want to try a front clipping no pull harness of some type or a head halter (but with a head halter be sure he's not getting a running start before lunging or he may hurt his neck). When Tucker was young, after walks, I'd put him on his long line outside and let him have his zoomies out there (often using his tennis ball to get him started). Definitely bring treats! The fact that he was able to calm down by himself is a super good sign that with some training you guys should be able to get him under control. I think not being on a flexi may have helped if, while he was on a flexi, he had to be quickly reeled in whenever a dog showed up....

I don't think Bryan was too out of line really, the spaniel took his food and that's a big no-no, Bryan didn't do any damage. Obviously things happen and you don't want Bryan harming any of the other dogs, so I'd certainly try and work with him. I think all the dogs need to learn a little something....

You could try capturing or shaping. Capturing would just mean being prepared with clicker (or marker word) and treats and rewarding when he randomly lies down on his own. The trainer shouldn't be actively working with the dog the whole time. They'll talk to your in-laws about the issues, see the behavior for themselves (if possible), then come up with a training plan and instruct/show your in-laws how to implement it using the dog.
