Sounds like you are off to a great start with your new puppy! I don't have any breed specific advice, but wanted to offer what I did when playing fetch with Lady as a puppy. She is a herding mix, so liked to grab at hands near her toys; not to be aggressive, but just getting caught up in the moment....

My mom and I have had an Aussie/Sheltie mix for 11 years now, and have had great luck with food rewards for her, unless she is in a high stress situation. I have also worked at a doggie daycare for the past 2+ years, and all the aussies and aussie mixes we have had come through respond very well to ...
