Just to say I agree with Rachel540 's advice about reinforcing sitting for all treats and privileges. I did the same with my jumpy, excitable rescue hound, and it worked nicely. Whether I'm putting his lead on, throwing the ball in the park, or putting food down, if he's jumpy I stand still...he goe...

I wanted to get my GSD cross to look at me when I called him...I can't remember why and its not a behaviour I have maintained...but I just used a clicker to reinforce the exact moment he looked at me, followed by a treat. He soon got the hang of it...

My GSD cross had similar issues in the first year or so after I got him from the rescue.
